These are a few of the recipes using some of the local products.

 

  Breadfruit and spinach cakes

1 cup of breadfruit (cooked and mashed)
3 cups whole wheat or white flour
4 tsp baking powder
1 cup chopped spinach
1 bunch of Bajan seasoning
sliver of hot pepper
salt to taste
water for mixing
oil for frying    
                                  

Method

  1. Mix all ingredients together in a bowl with enough water to form a dropping consistency
  2. Fry in hot oil until golden brown
  3. Cool and serve with pepper dip

 

 

Basic cassava flour/Farine Cassava

  1. Peel, wash and grate. Cover with net/cloth and sun dry

N.B.

This flour can serve as a booster for other flours and can be used for making dumpling porridge, pone, breads, biscuits, pancakes, waffles, bammies,etc.                                   

 

 

Cassava Bammies

2 lbs cassava flour (dampened)
1 tsp salt                                

Method          

  1. Mix cassava flour and salt in mixing bowl       
  2. Squeeze together and shape into patties          
  3. Freeze until ready to use                      
  4. Before use, soak with milk or water        

 

Sweet Potato Pudding

1lb grated sweet potato
2ozs sugar
half cup water
1 medium sized onion
1 bunch Bajan seasoning
half cup pepper
2 tsp oil or butter
salt to taste

Method

Combine all ingredients in a mixing bowl      

  1. Pour into a greased pan/dish                    
  2. Cook in a Bain Marie                               
  3. leave to cool a little                               
  4. Serve with souse /pickled pork
